1 head of broccoli, chopped finely to resemble rice
1 tbsp EVO or vegan butter (I used garlic infused EVO)
Seasonings of choice (Tonight I thought a couple teaspoons of Chinese Five Spice would go well with the Mongolian cauliflower)
Heat vegan butter in a large pan over medium heat, sauté the rice with seasonings until the broccoli is tender, about 2 to 3 minutes.
