Broccoli Chickpea Salad

Changes:

  • Amounts were a little less or a little more here and there because of what I had on hand

  • Replaced maple syrup with dolcedi

Ingredients

4 cups chopped #broccoli, chopped

1 (15 oz) can #chickpeas, drained and rinsed

Heaping 1/2 cup dried #cranberries, or more if you like

1/2 cup roasted sunflower seeds

1/3 cup diced red onion

Salt, to taste


Dressing

1/3 cup EVO

1 tbsp dolcedi

1 tbsp apple cider vinegar

1 tsp dijon mustard

Salt and pepper, to taste


Instructions

Mix all the salad ingredients together in a large bowl. Mix dressing ingredients separately in a small bowl, and pour it over the salad. Stir the dressing in well and pop it in the fridge until you're ready to eat.
