Blueberry Stuffed French Toast or Sweet Blueberry Panini

Updated: Aug 24, 2019

Modified Sweet as Honey Recipe | Serves: 1 | Total Time: ~ 15 minutes

Toast Ingredients per Serving

3 tbsp almond milk #yogurt

1 tbsp maple syrup

1/4 tsp vanilla extract

2 slices thick #glutenfree bread

1/3 cup #blueberries, defrost

Coconut & cinnamon spread

1 tsp. coconut oil, solid

1/2 tsp. cinnamon

1 tbsp sugar

Pinch of salt

In a bowl, using a fork combine the coconut & cinnamon spread ingredients. Spread the coconut cinnamon spread on one side of each bread slice.

Place the bread slices onto a plate covered with parchment paper. Make sure the side where you spread the coconut spread is directly facing the parchment paper.

In another small bowl, combine together yogurt, syrup, vanilla extract until it forms a thick cream. Spread on both bread slices - side where you didn't spread any coconut spread. Add the blueberries on one bread slice. Make a sandwich. Set aside.

Warm a skillet over medium heat or a sandwich maker – I used a waffle iron. If using a skillet, when hot add the sandwich and cook on both sides for 2-3 minutes until crispy, golden brown and a nice cinnamon smell begins to form. Using the waffle iron, just leave it in for 5 minutes when hot.

Serve with toppings of choice. I served as is. I had it for #breakfast #brunch, but could probably make for a good #dessert.
