Blackberry & Tahini Summer Salad

Changes: replace baby greens with spinach; used 1 avocado instead of 2; skipped edible flowers and snap peas; skipped the water in the dressing


6 cups mixed baby greens

1 avocado, sliced

1 cup fresh blackberries

2 cups rainbow cherry tomatoes, halved

1/4 cup pumpkin seeds


1/4 cup tahini

3 tbsp extra virgin olive oil

3 tbsp lemon juice

1 clove garlic, minced

1/2 tsp salt

1/2 tsp black pepper


Prep the dressing first: to a small jar add tahini, olive oil, lemon juice, minced garlic, sea salt, pepper, and 1 Tbsp. water. Tightly cover jar with a lid and shake very well to combine. If the mixture is too thick, add in another tablespoon of water.

To a very large salad bowl or platter: add spinach, cherry tomatoes, and blackberries. Gently toss to combine. Top with avocado slices, pumpkin seeds, and a hearty drizzle of tahini dressing. Serve immediately
