Beet & Cabbage Soup

It's December 26. I was too lazy to make myself anything vegan on Xmas Eve and Xmas, which meant I ate cheese and crackers for two days, basically. I also had a huge helping of potato and cheese pierogies.


It's time to detox. What better way to combat carb-loaded Ukrainian pierogies than with beets and cabbage?

Slightly Modified a Recipe from Oh She Glows | Serves: ~9 cups | Time: ~2 hours


Ingredients

2 tbsp EVO

2 cups diced red onion

5 cups diced red #cabbage

3 cups peeled and diced raw #beets

4 cups marinara sauce

4 cups water

Salt, to taste

Cashew Sour Cream, for serving (optional, I went for it, did the short soak option)

Fresh dill, for garnish (optional, I sprinkled some dry dill)


The real deal on the marinara sauce aisle: nutritional facts vary wildly by brand. One of the jars I examined had the sodium level as high as 25% DNV, and 90 calories per serving. I ended up with Organico Bello which is only 10% DNV for sodium and 40 calories per serving.

Instructions

Add the coconut oil into a large pot. Over medium heat, sauté the onion for about 3 to 5 minutes, stirring once or twice.


Add the diced cabbage and beets. Stir again. Continue sautéeing for another few minutes.


Add all of the marinara sauce and the water. Stir to combine. Simmer the soup, covered, over low to medium heat for 1 hour and 30 minutes to 1 hour and 45 minutes, or until the beets are fork-tender.


Taste and season with salt to taste. Ladle into a bowl and serve with cashew cream and dill.


Supposedly, this soup keeps well for up to a week, so yay lunch!

1 piece of babka

2 handfuls of chex mix

Vegan chickpea salad sandwich on a coconut wrap

Bowl of soup with cashew sour cream and dill

2 cups of coffee

5 glasses of water

White wine with dinner


Exercise

I got a fitbit for Christmas! My goal is to always strive for 10,000 steps, but a minimum of 5,000 on a lazy day. The good news is my walk to and from the grocery store gets me to 5,000, so lazy days, ain't so bad.


I'm also going to pay way more attention to my heart rate since I have the technology now, and I should've started monitoring the moment I found out I have a kidney problem. In the good ol' days, my resting heart rate was 50 bpm. Today, my resting was as low as 62 bpm. Not too shabby.


Today, I didn't set up my fitbit until 2pm or so. As of dinner time, I have 6,623 steps or about 3 miles.
