Balsamic Eggplant Steaks

Hubby got his meat. I got me some eggplant steaks.

Simplified a Recipe from Bites of Wellness | Serves: | Time: ~2 hrs (mostly inactive)


1 #eggplant sliced into 1 inch rounds

1 tbsp salt

1/4 cup balsamic vinegar (I had a fancy fig and balsamic vinegar on hand)

1/4 tsp salt

Pepper to taste


Liberally cover eggplant rounds with salt and allow to sit in strainer, 30 minutes to an hour.

Wash salt off eggplant. Place eggplant steaks in a flat container with a lid. Add balsamic vinegar, salt and pepper and shake to cover eggplant steaks. Let sit in marinade 30 minutes.

Preheat oven to 400.

Place parchment paper on a baking sheet. Lay balsamic eggplant steaks in on the baking sheet. Bake for 30 minutes, flip half way through.
