Used some leftovers to make a veggie packed breakfast | Time: ~10 min | Serves: 4 pieces of toast
4 pieces of thick bread of choice (I used an "artisan" rosemary loaf from Food Lion)
1 small ripe avocado
1/4 medium #zucchini, diced
1/4 medium #tomato, diced
A few tbsp of a red onion, diced
A few tbsp of a green pepper, diced
1 tbsp chopped kalamata olives
Put your toast in the toaster. Meanwhile, cut the a avocado in half and remove the pit. Toss the remaining ingredients in a small bowl.
Remove toast from toaster. Spread avocado on each piece of toast. Top with vegetable medley.
