Grilled Peach & Corn Pizza (DF, GF)

Changes: bought GF pizza dough; added corn; replace pine nuts with walnuts; used an indoor grill. My husband added ham to his side and very much enjoyed.


Ingredients

Frozen gluten free pizza dough, thawed (the one I chose had egg in it)

Two #peaches cut into wedges (probably could use just 1 large)

1 cob of corn, shucked

1 ½ tbsp olive EVO

6 oz vegan mozzarella


Vegan Pesto (double if you like a lot of sauce, I did!)

10-12 leaves fresh basil

1 tbsp walnuts

1 tbsp nutritional yeast

1 tbsp vegan parmesan

1 tbsp olive oil

2 cloves garlic

2 to 3 tbsp water

Salt and red pepper to taste


Instructions

Warm a grill up to a low temperature to 300°F. Brush corn and peaches with olive oil. Add the corn first and grill for 5 minutes. Then add the peaches for 5 minutes more. Remove corn and peaches from the grill. Allow them to cool before getting the kernels off the cob.


Meanwhile, make your pesto by blending everything together.


Preheat oven to 495F. Spread the dough onto a greased pizza pan. Cover the dough in the pesto. Then add peaches and corn. Then sprinkle the mozzarella shreds on top.


Bake for 15 minutes or until crust is brown and cheese is melty.


Slice up and enjoy!
