Grilled Brussels Sprouts (GF, V)

Ingredients

1 lb. #BrusselsSprouts, trimmed, halved

3 tbsp EVO

2 tbsp balsamic vinegar

1 tbsp grainy mustard

1 tbsp honey or agave

1/4 tsp crushed red pepper flakes

Kosher salt

1/2 cup finely grated vegan Parmesan


Instructions

Prepare a grill for medium heat; preheat 5 minutes (or heat a grill pan over medium heat).


In a large bowl, toss Brussels sprouts, oil, vinegar, mustard, honey/agave, and red pepper flakes; season with salt.


Carefully thread sprouts onto metal skewers. Grill, turning frequently, until sprouts are tender and cooked through, 10 to 15 minutes.


Transfer Brussels sprouts to a platter. Top with vegan Parmesan.
