Caribbean Couscous Salad (V)

Ingredients
1 cup dry Israeli #couscous
1 #mango, peeled & diced
1 ear #corn on the cob kernels removed (I used a small can)
1 jalapeno, fine diced
1 small red bell pepper, finely diced
2 scallions thinly sliced
1/2 cup fresh cilantro leaves chopped
1/2 cup Dominican sofrito (I found a jarred option at Harris Teeter)
S&P, to taste
Instructions
Prepare couscous according to package instructions. Cool to room temperature.
Combine cooled cooked couscous with remaining ingredients. Serve chilled or at room temperature.
