Summer Vegetable Sesame Noodles

Summer Vegetable Sesame Noodles

Ingredients

1 medium #zucchini, spiralized

1/2 cup #corn kernels

4 oz soba noodles

2 tbsp coconut aminos

1 tbsp tahini

1 tbsp sesame oil

1/2 tbsp rice vinegar

Dash of salt

1 cup cherry #tomatoes

2 scallions, sliced

1 tsp sesame seeds


Instructions

Cook soba noodles in boiling water according to package directions.


Meanwhile, combine aminos, tahini, oil, vinegar, and salt in a large bowl.


Add the soba noodles, spiralized zucchini and corn to the bowl along with the tomatoes and scallions. Toss to combine. Serve topped with sesame seeds.
