Lazy Mushroom Kale Ramen

Seriously, so lazy, I didn't measure. Here are some approximations.

Based off of a Nutmeg Nanny recipe | Serves: 1 large helping (would make 2 nice lunch servings) | Time: ~15 min


Ingredients

1 tbsp EVO

1 cup sliced shiitake #mushrooms

1 cup #kale leaves

2 cups veggie broth

1 tsp ginger

S&P, to taste

3 oz #ramen noodles

Sriracha, to taste

Coconut aminos, to taste

Optional: a fried egg, or cooked egg whites if you're not vegan


Instructions

Warm up a put, add EVO. Add mushrooms and kale. Saute until soft, about for 5 minutes. Add broth, ginger, and S&P. Bring to a boil. Add noodles and cook 4 minutes. Remove from heat and pour into bowl. Add sriracha and coconut aminos to taste. If you wanted that egg, put it on, as well.


Notes for Next Time

Having the recommended green onion definitely would have helped. I have a ton of carrots on hand, so I'm not sure why I didn't do this, but some finely chopped carrots would probably be pretty great. I always like ginger, so why not saute a minced clove for a minute before adding the mushrooms and kale.
