Asian Inspired Broccoli, Kale and Avocado Sauce

This recipe started as a pasta sauce, but the hubby bought himself some teriyaki chicken, so I wanted to make something that would go well with that. Essentially, we changed the herbs and seasonings and instead of serving over pasta, we served it over cauliflower rice. Instead of chicken, I had marinated mushrooms based off of a ramen recipe I did a couple years ago.


This sauce takes a bit of time because of all the boiling. If water boiled magically in a minute. This would take about 15 minutes.


Asian Inspired Broccoli, Kale and Avocado Sauce

Inspiration: Cooking with Pree | Time: ~25 min | Serves: 2


Ingredients

1 cup #broccoli florets

1 cup tightly packed #kale

1/3 cup fresh cilantro leaves

1/4 cup cashews, quick soaked in boiling water for 10 min (honestly, the avocado is super creamy, probably could have skipped and made the nutfree crowd very happy)

1-2 tbsp sriracha

1 tsp rice vinegar

1 tbsp lime juice

salt as needed (I used about 1/2 tsp)

water as needed to thin (I used about 1/4 cup)


Instructions

Blanch the broccoli in boiling water for 3 minutes. Remove and set aside. Blanch the kale in boiling water for 1 minute. Remove and set aside. Let each cool just a bit before you add it to your Ninja Bullet or other blender along with the other ingredients. Blend well.


How I went on to use it

Drained my marinated mushrooms (ingredients below) and added them to a pan with a little bit of sesame seed oil over medium heat for 3-4 minutes, stirring constantly. At minute two, I added the sauce. This way, the sauce is warmed through when you go to toss it on top of the cauliflower rice. Tonight, we went with frozen cauliflower rice. Quarantine times, means it's crazy difficult to get cauliflower. I don't get it.


The Mushroom Marinade (serves 2, minimum 1 hr marinating time)

16 oz cremini #mushrooms, destemmed and quartered

1/3 cup coconut aminos

1 tsp ginger powder

1/2 tsp curry powder

2 tsp agave syrup

2 cups of coffee

6 glasses of water (striving for 7 before bed)

2 glasses of diet Dr. Pepper

1 banana

A mini baby bell mozzarella

Exercise

None. I got 20 min of deep sleep according to my garmin. It's amazing any of these words have come together to form coherent sentences. They are coherent, right?
