I used to love chicken and tuna salad sandwiches, so I'm always finding more ways to scratch that itch. Here's the latest.
Modified a From My Bowl recipe | Serves: 3 | Time: ~10 min
2 cups cooked #chickpeas (one can)
1/2 cup began mayo (or less)
1/4 cup diced red onion, diced
1 tbsp parsley, finely chopped
1/2 tbsp dijon mustard
1/3 cup sliced #almonds
1/2 tsp poultry seasoning
1/2 tbsp lemon juice
S&P to taste
1-2 tsp dill
1/2 cup sliced #grapes
First, add the cooked chickpeas to a large bowl, and mash them with a fork. Add the remaining ingredients for the salad into the bowl, and mix well.
I put my salad on a low-carb wrap with some mixed greens. I'm sure it's awesome on toasted bread or on a small green salad as well.
